Baked Blueberry Sour Cream Donuts

These mouthwatering baked sour cream and blueberry donuts make a delightful breakfast or snack. They are full of juicy blueberries and are soft and moist. For those who love donuts, they are also a healthier option because they are baked rather than fried.


Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup sour cream

  • 1/4 cup unsalted butter, melted

  • 1 large egg

  • 1/2 teaspoon vanilla extract

  • 1/2 cup fresh or frozen blueberries

Instructions:

Set the oven temperature to 175C 350F


Mix the flour, sugar, baking soda, baking powder, and salt in a mixing bowl


Put the sour cream, egg, melted butter, and vanilla extract in a separate bowl


Stir the dry ingredients until they are well combined after adding the wet mixture


Fold in the blueberries gently


Spoon about two thirds of the batter into each mold in a donut pan that has been greased


Bake the donuts for 12 to 15 minutes, or until they bounce back when you touch them, in a preheated oven


After taking them out of the oven, allow them to cool in the pan for a few minutes before moving them to a wire rack to finish cooling


Savor the baked sour cream donuts with blueberries!

Onion and Chive Au Gratin Potatoes

Onion and chives au gratin potatoes are a rich and comforting side dish that can be served at any time. Potatoes and onions that have been thinly sliced are baked with cheddar cheese, garlic, and fresh chives. The result is a rich dish that goes well with any main course.


Ingredients:

  • 4 large potatoes, thinly sliced

  • 1 onion, thinly sliced

  • 1 cup grated cheddar cheese

  • 1/4 cup chopped chives

  • 1 cup heavy cream

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 2 tablespoons butter

Instructions:

Before you start cooking, heat the oven to 375F 190C


Put butter in a baking dish


Put half of the sliced onions and potatoes in the baking dish


Add half of the chopped garlic, chives, and cheddar cheese to the potatoes


Add pepper and salt


Add the rest of the potatoes, onions, garlic, chives, and cheese to the layers


Cover the potatoes with heavy cream


Put butter on top


Put foil over the dish and bake for 45 minutes


Take the foil off and bake for another 15 minutes, or until the potatoes are soft and the top is golden brown

Once the potatoes are soft, cook them on low for 6 to 8 hours with a lid on the crockpot

Vegan Chickpea Curry

A tasty and filling vegan version of chicken curry, made with protein-rich chickpeas and tasty spices.


Ingredients:

  • 2 cups chickpeas, cooked or canned

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 cup diced tomatoes

  • 1 can coconut milk

  • 2 tablespoons curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon turmeric

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Fresh cilantro, for garnish

Instructions:

Warm up the olive oil in a big pan over medium-low heat


Slice the onion, garlic, and bell pepper and add them


About 5 minutes of cooking will soften the food


Add the turmeric, cumin, coriander, and curry powder and mix them in


After another minute, the food should smell good


Blend in coconut milk and tomato chunks


Bring to a low boil


Put in the chickpeas and mix them in well


Allow the flavors to blend by simmering for 10 to 15 minutes


Add pepper and salt to taste


Serve hot with fresh cilantro on top

Spaghetti Scampi7.k

This is a delicious take on the classic spaghetti scampi dish. The shrimp are cooked in a buttery sauce that has garlic in it, and the white wine and fresh lemon juice make it taste even better.


Ingredients:

  • 300g spaghetti

  • 400g shrimp, peeled and deveined

  • 4 cloves garlic, minced

  • 1/4 cup olive oil

  • 1/4 cup unsalted butter

  • 1/4 cup white wine

  • 1/4 cup fresh parsley, chopped

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Grated Parmesan cheese for serving

Instructions:

Follow the directions on the package to cook the spaghetti until it is al dente


Remove the water and set it aside


Warm up the butter and olive oil in a big pan over medium-low heat


Add the minced garlic and cook for about one minute, until the garlic smells good


Put the shrimp in the pan and cook for about two to three minutes on each side, until they turn pink and opaque


Add the lemon juice and white wine, and let it simmer for two to three minutes to make it a little less thick


Add pepper and salt to taste


You can add chopped parsley now


Add the cooked spaghetti to the pan and mix it around with the shrimp scampi sauce until it's well covered


Grate some Parmesan cheese on top and serve hot
